Ingredients

Scale

For the Stew:

  • 1 tablespoon olive oil (or butter)
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 1 teaspoon paprika (optional, for added depth)
  • 1 medium onion, diced
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 2 tablespoons all-purpose flour (to thicken the stew)
  • 2 medium potatoes, diced into bite-sized pieces
  • 1 cup frozen peas (optional, for added sweetness)
  • ½ cup chopped fresh parsley (for garnish)

Instructions

Sear the Chicken:

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken pieces with salt, black pepper, and paprika. Add the chicken to the pot and sear for 3-4 minutes until lightly browned. Remove the chicken from the pot and set aside.

Sauté the Vegetables:
2. In the same pot, add the diced onion, carrots, and celery. Sauté for 5-6 minutes until the vegetables begin to soften. Stir in the minced garlic and cook for 1 minute until fragrant.

Build the Stew Base:
3. Sprinkle the flour over the vegetables and stir to coat. Gradually pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Stir in the diced potatoes and bring the mixture to a boil. Reduce the heat to medium-low and simmer for 10 minutes, or until the potatoes are tender.

Add the Cream and Chicken:
4. Stir in the heavy cream and return the seared chicken to the pot. Simmer for an additional 8-10 minutes, or until the chicken is cooked through and tender.

Finish with Peas and Parsley:
5. If using, stir in the frozen peas during the last 2 minutes of cooking. Taste and adjust seasoning with additional salt, pepper, or paprika if needed. Garnish with fresh parsley before serving.

Serve and Enjoy:
6. Ladle the creamy chicken stew into bowls and serve warm with crusty bread, biscuits, or a side salad for a complete meal.
