  • 1 tablespoon olive oil

  • 1 lb chicken breast, thinly sliced

  • 1 packet (1 oz) fajita seasoning (or homemade blend)

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • 2 garlic cloves, minced

  • 1 cup canned black beans, drained and rinsed

  • 1 cup corn kernels (fresh, frozen, or canned)

  • Optional toppings: avocado, sour cream, shredded cheese, fresh cilantro, lime wedges


Instructions

  1. Cook the Chicken:

    • Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and fajita seasoning, and cook for 5-6 minutes until the chicken is browned. Remove and set aside.

  2. Sauté the Veggies:

    • In the same skillet, add the bell peppers, onion, and garlic. Sauté for 3-4 minutes until softened.

  3. Add Rice and Broth:

    • Stir in the rice, chicken broth, black beans, and corn. Bring to a simmer.

  4. Combine and Cook:

    • Return the chicken to the skillet. Cover and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

  5. Serve:

    • Fluff the rice with a fork and serve warm. Top with avocado, sour cream, shredded cheese, cilantro, or a squeeze of lime, if desired.
