Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined (tails on or off, as preferred)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (or butter for extra richness)
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach leaves
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or dried basil and oregano)
  • 2 tablespoons unsalted butter (optional, for added richness)
  • Fresh parsley, chopped (for garnish)
  • Optional: Red pepper flakes for heat

Instructions

  1. Prepare the Shrimp:
Pat the shrimp dry with paper towels and season lightly with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side, just until pink and opaque. Remove the shrimp from the skillet and set aside.

  2. Sauté the Aromatics:
In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for 30 seconds to 1 minute, until fragrant. Stir in the chopped sun-dried tomatoes and cook for another minute.

  3. Add the Spinach:
Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.

  4. Make the Sauce:
Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning, whisking until the cheese melts and the sauce thickens slightly. If desired, add a tablespoon or two of butter for extra creaminess.

  5. Return the Shrimp:
Add the cooked shrimp back to the skillet, stirring to coat them in the sauce. Cook for 1-2 minutes to heat through. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.

  6. Garnish and Serve:
Transfer the shrimp and sauce to a serving dish. Garnish with freshly chopped parsley and additional Parmesan cheese if desired. Serve hot over pasta, rice, or with crusty bread for dipping.
