Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs, if preferred)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (or butter for richer flavor)
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ cup chicken broth
  • 1 cup grated Parmesan cheese (plus extra for garnish)
  • 1 teaspoon Italian seasoning (or dried herbs like thyme and oregano)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken:
Season the chicken breasts generously with salt and pepper on both sides. Heat olive oil (or butter) in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/75°C). Remove the chicken from the skillet and set aside on a plate.

  2. Make the Sauce:
In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for 30 seconds to 1 minute, until fragrant but not burnt. Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Stir in the heavy cream, Italian seasoning, and grated Parmesan cheese. Whisk continuously until the cheese melts and the sauce is smooth.

  3. Thicken the Sauce (Optional):
If you prefer a thicker sauce, stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens slightly.

  4. Return the Chicken to the Skillet:
Place the cooked chicken back into the skillet, spooning the sauce over the top to coat evenly. Let it simmer for 2-3 minutes to heat through and allow the flavors to meld.

  5. Garnish and Serve:
Transfer the chicken to serving plates or a platter. Spoon extra sauce over the top and garnish with freshly chopped parsley and additional grated Parmesan cheese. Serve hot with your choice of sides like fettuccine, mashed potatoes, or steamed vegetables.
